Replace the seitan with slice Field Roast, vegan sausage, or Gardein chicken products.

For a gluten-free version of this Gyro sandwich, replace the seitan with extra firm tofu or tempeh.

Seitan Ingredients:

  • 1 Tblsp. olive oil
  • 1 yellow onion, slice thinly (1 1/4 cups)
  • 1 small bell pepper, sliced thinly
  • 2 to 3 large garlic cloves, pressed or minced
  • 8 oz. seitan strips
  • 1/4 tsp. liquid smoke
  • 1 Tblsp. finely chopped fresh oregano
  • 1 tsp. minced fresh rosemary
  • 1/8 tsp. freshly ground black pepper
  • 2 Tblsp. freshly squeezed lemon juice
  • 2 tsp. wheat-free tamari or other soy sauce

Gyro Ingredients:

  • 2 to 4 pita breads
  • Tomato, sliced thinly
  • Red onion, sliced thinly
  • Tzatziki sauce


  1. Prepare the seitan: Place a sauté pan over medium-high heat
  2. Place the oil onion, pepper, and garlic in the pan and cook fro 2 minutes, stirring frequently
  3. Lower the heat to low, add the remaining ingredients, and cook for 15 minutes, stirring occasionally
  4. Meanwhile, prepare the gyro fixings
  5. Warm the pita breads on a skillet or in the oven
  6. To assemble, stuff your pita with the fixings, add the seitan, and enjoy
  7. For an authentic Greek experience, smash your plate when finished

Recipe Tips:

We chose to highlight this Greek vegetarian sandwich recipe because it is a powerhouse of flavor and one of our favorites. Make sure you serve it with the tzatziki sauce recipe that follows for maximum flavor. Make the tzatziki sauce with homemade vegan mayonnaise for the best results.

If you do not have fresh herbs available that's OK, just reduce the amount of herbs called for to one-third and use dried instead.
