  • 1 medium-size cucumber, peeled, sliced in half, and seeded
  • 2 cups vegan mayonnaise OR 1/2 yogurt| 1/2 mayonnaise
  • 2 Tblsp. chiffonaded fresh mint
  • 1/4 cup freshly squeezed lemon juice
  • 4 to 6 garlic cloves, pressed or minced
  • 1 Tblsp. minced fresh dill, or 1 tsp. dried
  • 1/8 tsp. freshly ground black pepper
  • Pinch of cayenne


  1. Grate the cucumber on the large holes of a cheese grater. You should have 1/2 to 3/4 cup
  2. Combine with the remaining ingredients in a large bowl and mix well

Mark Reinfeld specializes in quick and easy meals that you can prepare in 30 minutes. Familiarize yourself with the recipes and assemble all your ingredients beforehand and this meal will be ready in no time.

Squeeze the Cucumber: I've found when making tzatziki that this makes a thicker sauce. Mix the grated cucumber with 1/4 tsp salt and let sit for 15 minutes. Squeeze the excess water from the cucumber in your hands or through a strainer, before combining with the other ingredients.

Sub minced fresh cilantro, basil or parsley for mint and dill if those herbs aren't available.

If you do not have fresh herbs, just reduce the amount to one-third and use dried leaf herbs instead.
