Ideal hot weather meal made with three simple core recipes: Spicy Broiled or Grilled Tempeh, Chipotle Mayonnaise, and Buttermilk-Style Coleslaw

Make those recipes ahead, then make tacos in minutes when you're ready to eat. Or put together different vegan meals.

My super discriminating son-in-law (I would never call him picky) pronounced Spicy Tempeh Tacos 'fantastic'. Even the grandchildren loved them - and they are definitely picky!

Total prep & cook time: 15 minutes, with make-ahead ingredients

  1. Prepare the coleslaw ahead and refrigerate. Remove from fridge 1 hour before assembling the tacos.
  2. Make chipotle mayo ahead and store in the fridge. Remove from fridge 1 hour before assembling the tacos.
  3. Make the tempeh: Prepare the marinade and marinate the tempeh slices at least four hours before making the tacos, then broil or grill the tempeh slices
  4. Once the tempeh is broiled, heat the tacos on a medium hot dry frying pan or grill
  5. Slice the avocados
  6. Spread 1/4 cup coleslaw on 1/2 of each taco
  7. Add 2 tempeh slices, 2 - 3 avocado slices, and 1 Tbsp chipotle mayo
  8. Fold over the other half of each taco
  9. Eat these gloriously messy tacos by hand with a stack of napkins handy

The key to quick & easy spicy tempeh tacos is to have all the ingredients made ahead. All the components keep well in the fridge for several days. Then it's just a matter of pulling everything out of the fridge and assembling a tasty taco, or anything you like!

Officially, one taco is a serving, but of course a hungry adult or teenager can eat two or three servings.
