Is there no end to the variations on quinoa salad? We think not! Because we love veggies & we love quinoa.

Our Vegan|Vegetarian Green Quinoa Salad was inspired by the abundant variety of green veggies available in St. Petersburg FL, which we visited this winter. But it's scrumptious any time of year - and especially fine with Tahini Lime Dressing

  • 2 cups cooked quinoa
  • 1 cup chopped green lettuce
  • 1 cup chopped baby spinach
  • 1 cup chopped cucumber
  • 1 cup chopped avocado
  • 6 artichoke hearts, water pack, halves
  • 1/4 cup chopped parsley or cilantro

  1. Add quinoa to a bowl
  2. Rinse lettuce, spinach, parsley, cucumber and chop in bite sized pieces
  3. Cube 1 cup avocado
  4. Slice artichoke hearts in half lengthwise
  5. Coarsely chop olives
  6. Add all other ingredients to the quinoa and mix well
