Make this breakfast burrito recipe vegan by substituting scrambled tofu for scrambled eggs and leaving out the cheese or using vegan cheese in its place.

  1. Cover tortillas in foil and warm in oven at 300 degrees Fahrenheit while you prep the rest of the ingredients
  2. Heat beans, scramble eggs or tofu, and prepare toppings
  3. Spread each tortilla with 1/2 cup refried beans, eggs or tofu, and add desired toppings
  4. Roll tightly and serve

For a satisfying breakfast on the go, make a double recipe, wrap the leftovers in plastic wrap and freeze. In the morning, grab a burrito, remove the plastic, wrap it in a paper towel and microwave it for 1-2 minutes until hot, and enjoy!
