Applesauce Pancakes

Easy Applesauce Pancake Recipe: Delicious! Plus gluten free, low cholesterol, plenty of protein, fiber and like most pancakes high in carbs. My grandchildren loved these apple pancakes and my skinny gluten free husband was in heaven.

I recently updated this recipe using my all purpose gf flour mix - worked like a charm.

This homemade applesauce pancake recipe was inspired by Country Apple Pancakes from Vegan Heartland. It was helpful to have a good starting point. Thank you Matthew!

Total Cook & Prep Time: 30 minutes

Yield: 4 servings, 12 pancakes, 4 inch diameter

Wet Ingredients:

  • 1 1/2 cup almond milk, soy or hemp milk
  • 1 tsp apple cider vinegar OR 1 Tbsp lemon juice
  • 1 Tbsp gr flax seed or egg replacer + 1/4 cup water
  • 1/4 cup cooking oil
  • 1 tsp vanilla
  • 1/2 cup thick unsweetened applesauce

Dry Ingredients:

  • 1 cup all purpose gf flour mix
  • 1/2 tsp xanthan gum
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon


  1. Add the lemon juice or vinegar to the non-dairy milk and allow to curdle
  2. Mix the ground flax seed or egg replacer with 1/4 cup water and let sit 5 minutes
  3. Preheat the griddle or fry pan on medium.
  4. Blend the wet ingredients together in a bowl, using a whisk.
  5. Combine the dry ingredients in a large pitcher.
  6. Mix the wet and dry ingredients together. Don't over mix.
  7. The mixture should be thick, thinner than muffin batter but too thick to pour. Try a test pancake, and if the pancake mix seems too thick, add another Tbsp or 2 of milk. If it seems too thin, add another 1 or 2 Tbsp of flour.
  8. Lightly oil the pan
  9. Add a spoonful of batter (about 3 Tbsp) to the pan and spread it with the back of the spoon into a circle (or any shape you like) about 1/4 inch thick and 4 inches in diameter. Repeat until you have no more room.
  10. Cook pancakes until dry on one side and golden brown on the other, then flip and brown the other side.
  11. These pancakes should cook slowly, with a total cooking time of 8 - 10 minutes. If the pancakes are browning too much, too fast, turn the heat down a bit.
  12. Keep on a plate in a warm oven covered by a dish towel until all the pancakes are cooked.
  13. Serve with more applesauce, or vegan spread and agave or maple syrup.

Recipe Tips:

Different brands of gf all purpose flour will absorb more or less moisture, which is why you might need to add a bit more milk or flour.

Xanthan Gum is an excellent binder but if you don't have it, add 2 Tbsp cornstarch or arrowroot starch. Use any vinegar if you don't have apple cider vinegar.

If you'd rather make these apple pancakes with regular wheat flour, use 1 1/4 cups whole wheat pastry flour or white spelt flour to replace gf mix and xanthan gum. Reduce the baking powder to 2 tsp.

To make ovo-lacto vegetarian pancakes, use dairy milk in place of non-dairy milk, and 2 eggs in place of the gr flax seed and 1/4 cup water.
