Quick Easy Recipe: Corn tortillas + refried black beans + heap of fixings

Vegan Tostada

Tostadas are a fun kid friendly meal with refried black beans on crispy corn or gf tortillas, piled with goodies as high as you can get in your mouth. Almost anything can go on a tostada.

This is a perfect do-it-yourself meal for a gang of kids or adults on any occasion.

You can have this meal-on-a-tortilla ready to eat in 20 minutes when you make the refried black beans ahead, or use canned refried beans.

Ingredients:

  • 12 tostado-sized corn tortillas (4 - 5 inch)
  • 3 cups refried black beans
  • Suggested Fixings:
  • Diced tomato
  • Chopped lettuce or spinach
  • Chopped cilantro
  • Guacamole or sliced avocado

  • Sliced black olives
  • Cheeze shreds
  • Vegan sour cream
  • Any kind of salsa
  • Hot sauce
  • Lime wedges
  • Salt and pepper

Directions:

  • Heat the refried beans
  • Heat the tortillas in a frying pan or on a griddle, or in the oven, until crispy
  • Spread 1/4 cup refried black beans on on top of each tortilla
  • Top each tortilla with everything you want on your tostada, starting with cheese
  • Pick it up carefully and eat it messily, with lots of napkins on hand

Corn tortillas are often fried for tostadas, but I thought that with all those toppings, frying the tortillas was over the top, so we cooked ours crispy in a dry fry pan. For a large quantity of tortillas, spread them on a large baking pan and bake or broil or grill them

We used our gf flatbread recipe, made them smaller and cooked them for longer at a lower temperature so they would get crispy.

We also made our own vegan sour cream, from the World Vegan Feast cookbook by Bryanna Clark Grogan, with 1 pkg of extra firm silken tofu blended until smooth with 3 Tbsp lemon juice and 1/2 tsp salt. It was delicious, with no suspicious additives to worry about.
