Corn tortillas are often fried for tostadas, but I thought that with all those toppings, frying the tortillas was over the top, so we cooked ours crispy in a dry fry pan. For a large quantity of tortillas, spread them on a large baking pan and bake or broil or grill them
We used our gf flatbread recipe, made them smaller and cooked them for longer at a lower temperature so they would get crispy.
We also made our own vegan sour cream, from the World Vegan Feast cookbook by Bryanna Clark Grogan, with 1 pkg of extra firm silken tofu blended until smooth with 3 Tbsp lemon juice and 1/2 tsp salt. It was delicious, with no suspicious additives to worry about.More bean cooking tips and directions
