Steamed Cauliflower and Green Beans

"With its mild taste and wonderful texture, cauliflower helps keep the fires of Pitta in check. Dill is also one of the great Pitta pacifying herbs of the Ayurvedic kitchen apothecary. For a sudden burst of wonderful aroma, pour the sauce over while the vegetables are still steaming."

This fresh cauliflower and green bean vegetable recipe is simple and delicious, including the sauce, which isn't cooked but just mixed together in a bowl. The ingredients can be found in most supermarkets. If you can't find fresh dill, I would say use dried, or substitute a different fresh herb, such as parsley.

For a quick lunch or dinner, combine this cauliflower & green bean recipe with rice or quinoa and fried tofu. Make extra and mix the leftovers together for a take-along lunch the next day. If you have more time to play in the kitchen, try it with Spicy Tofu Rice Pilaf

Ingredients:

  • For The Sauce:
  • 2 Tbsp chopped fresh dill
  • 1/2 cup organic cream of coconut or coconut milk
  • 1/2 cup organic cream of coconut or coconut milk
  • 1 Tbsp lemon juice
  • pinch turmeric
  • salt & pepper to taste
  • For The Vegetables
  • 1 cup bite sized pieces fresh grean beans
  • 1 small head cauliflower, trimmed and broken or cut into bite-sized florets (2 - 3 cups)

Directions

  1. First, make the sauce: In a mixing bowl, stir together all the ingredients. Cover and refrigerate for at least 1 hour
  2. Bring the filtered water to a boil in a steamer or in a saucepan with a steamer insert. Add the green beans, cover, and steam for 5 minutes. Add the cauliflower, cover, and continue steaming until the vegetables are tender but still slightly firm, 5 - 7 minutes more
  3. When the vegetables are done, arrange them on a platter, in a serving dish, or on individual plates. Pour the sauce over them and serve immediately
