Easy Crockpot Or Slow Cooker Recipes For Busy Veggies

I think the crockpot was invented by a vegetarian, because it's so well suited to vegetarian recipes. The slow cooker (or crockpot) is an inexpensive, indispensible kitchen tool for busy vegetarians or vegans. There's no difference besides the name between a slow cooker and a crockpot.

These easy crockpot recipes can begin on the stove and finish in the (slow cooker) crockpot. If you're in a big hurry, make them entirely on the stove top or oven. Or you can make them in the crockpot, then freeze in serving size containers for a quick meal when you need it.

If you need to reduce the cooking time, bring everything to a boil in another pan, while you preheat the crock pot, then throw it all in. It will then cook in 2 - 3 hours instead of up to 8 hours.

An inexpensive digital appliance timer is very helpful for controlling the cooking time, as it will turn the crockpot or slowcooker on and off for you while you're not there. Some crockpots come with built in timers.

The easiest way to use your slow cooker or crockpot for vegetarian recipes is just to throw everything in at once - grains, beans (cooked) or lentils, veggies, water, oil, spices - then cover and cook for up to 8 hours, reseraving salt for the end of cooking.

However, a few extra steps can add a lot of flavor to the recipe. However you do it, slow cooker or crockpot recipes are simple and easy to make, serve and clean up after, lovely to look at, and satisfying to eat.

These vegetarian (vegan) crockpot or slow cooker recipes are great to take to a picnic or potluck. They can easily be expanded to a feast, by adding a salad, artisan bread, and fresh fruit or dessert.
