Chocolate Lovers Serious Chocolate Chip Cookies
The Ultimate Vegetarian, Vegan Chocolate Chip Cookie Recipe
The original serious cookie recipe is lacto-ovo vegetarian. So of course, we had to have a vegan version, because vegans are serious chocolate lovers too!

Makes 3 dozen 3 inch cookies.
Cookie Ingredients (vegan version below):
- 2 3/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup butter, softened
- 1/2 cup unbleached cane sugar
- 1 cup light brown sugar, packed
- 2 tsp vanilla extract
- 2 large eggs
- 1 cup melted semi-sweet chocolate chips
- 1 12 oz pkg semi-Sweet Chocolate Chips
- 1 12 oz pkg white chocolate chips
- 1 cup chopped walnuts or pecans (optional
Vegan Version:
- 2 1/2 cups all purpose flour
- 1 Tbsp flax meal
- 1 Tbsp corn starch
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup vegan butter substitute
- 1/2 cup unbleached cane sugar
- 1 cup light brown sugar, packed
- 2 tsp vanilla extract
- 1 cup melted semi-sweet vegan chocolate chips
- 1 12 oz pkg semi-sweet vegan chocolate chips
- 1 12 oz pkg white chocolate chips
- 1 cup chopped walnuts or pecans (optional)
Cookie Directions:
- Preheat the oven to 375 degrees
- Melt chocolate according to package directions and set aside
- Oil or spread wax paper on three baking sheets
- Mix dry ingredients and set aside
- Cream the butter or veg spread with the sugar until light and fluffy
- Cream in vanilla and eggs if you're using
- Mix melted chocolate into creamed mixture
- Mix in the dry ingredients with spoon or electric mixer
- Stir in chocolate chips and nuts if using
- Scoop two heaping Tbsp at a time onto the baking sheets
- Bake one sheet at a time for 11 - 13 minutes (don't overbake!)
- Cool on pan two minutes, then transfer to cooling racks
