The 30-Minute Vegan's Taste of Europe by Mark Reinfeld will take you on an exciting culinary tour of vegan European cuisine with quick and easy vegan recipes that you can actually make in 30 minutes.
There are so many great vegan recipes in this vegan cookbook that it was very difficult to choose just three recipes to test. In the end I tested French Lentil Soup with Thyme, Herbes de Provence, Gyros, Tzatziki, and Pommes Frites.
The French Lentil Soup with Thyme is a delicious and healthy soup recipe featuring Puy lentils and fresh thyme. The optional Herbes de Provence herb mixture added a tremendous amount of flavor to the lentil soup recipe.
Tasters loved the flavors of the French lentil soup, but felt that there was too much heat. I will definitely make this lentil soup recipe again, but I will be reducing the black pepper and cayenne significantly.
Next I made the vegetarian Greek recipes: Gyros and Tzatziki, and another French recipe: Pommes Frites. These vegan gyros use seitan instead of meat for the filling but otherwise it's an authentic Greek gyro recipe served with tzatziki sauce made with vegan mayonnaise and a full complement of fixings in pita bread.
I served the Greek Gyros with Pommes Frites on the side. I used more tzatziki on the side to dip the potatoes in. My tasters loved these recipes, moaning as they bit into their gyros and dipped their pommes frites in the tzatziki.
I can tell that I will be getting a lot of future requests for these vegetarian Greek recipes.
Over all I really liked Mark Reinfeld's The 30-Minute Vegan's Taste of Europe. The recipes are clear and easy to follow.
Unlike many other cookbooks that claim to have quick and easy recipes, you can actually make these in 30 minutes or less.
The flavors are amazing, and the serving suggestions are spot on. I can't wait to try all the other recipes I wanted to test but didn't have time before writing this review.
