Vegan chef and cookbook author Robin Robertson has come out with a nutty new cookbook, Nut Butter Universe: Easy Vegan Recipes with Out-of-this-World Flavors.
Robin's new vegan cookbook features a wide variety of vegan nut butter recipes ranging from side dishes, entrees, breakfast, and dessert.
The range of flavors is equally wide from Asian, to African, to South American, and more.
In the lead up to the section of easy vegan recipes Robertson shows her readers how to make nut butter of any kind including a hazelnut butter recipe, sunflower seed butter recipe, chestnut butter recipe, and homemade tahini recipe.
She also includes a section telling how to make basic ingredients with nuts like vegan mayonnaise, vegan cream cheese, and more.
Vegan recipes include Asian Spring Rolls with Spicy Peanut Dipping Sauce, included on Robin's guest post, Nut Butter - A Kitchen Chameleon.
Plus we drooled over Cheesy Almond Broccoli Soup, Chocolate Macadamia Truffles with Coconut, and many more mouthwatering recipes.
The Pasta with Cauliflower Cashew Alfredo was creamy and flavorful and loved by all the tasters, veg and non-veg alike. It is best served fresh though, so consider adjusting the recipe quantities to avoid leftovers.
The Apple-Almond Butter Pancakes were also enjoyed by all except for the four-year-old taster who, like most small children, prefers her pancakes and most other food plain.
The only thing that we would do differently would be to chop the apple extra fine or coarsely grate so that the apples could cook through in the time it takes a pancake to cook.
We've finished testing Nut Butter Universe for this review, but we're not finished with the cookbook!
Other recipes that we plan to try are African Peanut Soup, Spinach with Sesame Sauce, Handcrafted Granola Sunflower Bars, and Pineapple Coconut Cheesecake. We're going to make the cheesecake using Robertson's recipe for Cashew Cream Cheese. Yum!
