Joel Fuhrman, M.D. is a family doctor and nutritional researcher who specializes in preventing and reversing disease through nutritional and natural methods. He is the author of the NYT bestseller, Eat to Live.

I knew before I read The End of Diabetes that preventing and reversing diabetes is possible through diet alone, but now I know why and how. All the details are in this book.

Thousands of Dr. Fuhrman's patients have reversed diabetes through his nutritarian diet. Of course they must eat like that from now on, but that's no hardship - the food is amazingly delicious.

So why aren't all physicians prescribing this simple plant based diabetes type 2 diet for their diabetic patients, since insulin dependence doesn't cure diabetes, but only makes it worse?

According to Joel Fuhrman, M.D., weight loss is key to reversing diabetes, and "the medical community has given up on weight loss as an avenue to help diabetics mostly because traditional diets don't work".

He goes on to say that "Even if you have failed on one diet after another in the past, please don't give up. The diet plan in these pages does work." Dr. Fuhrman's Eat to Live diet plan has worked for over 20 years on more than 10 thousand patients.

That's wonderful! But what's a mere 10,000 people, when 25 million Americans have diabetes – as of 2006. How many more have diabetes in 2013?

People tend to believe and do what their doctors tell them, and most doctors tell them to follow the recommended diabetic diet, and take insulin.

The basis of that diet is keeping carbohydrates from all sources to acceptable levels by exchanging foods for other foods, while controlling blood sugar levels with insulin. It's the S.A.D. with minor modifications, and it keeps diabetics dependent on insulin. It doesn't provide a way to get off insulin.

And that's the crux of the matter. The medical profession and the drug companies profit from keeping diabetics diabetic and on insulin. They will not make money if diabetes is cured, especially if the cure is as simple as a healthy diet, enough sleep and daily exercise.

Diabetes is the biggest health crisis in the U.S., killing people in droves, and bankrupting our health care system. Even still, changing the dietary habits of a lifetime is difficult, and for most us, unthinkable.

People will only try something different if they have exhausted all other options, and go looking for a solution outside the medical box.

He is a health hero because he is a conventionally trained medical doctor who has established a successful practice treating and reversing disease through nutrition. That takes guts.

He works tirelessly to promote his methods and reach as many people as possible who need his help.

In The End of Diabetes, Dr. Fuhrman has laid the mysteries of diabetes to rest - how the Standard American Diet causes diabetes, how the disease progresses, how conventional medical treatments affect the course of the disease, and how diet can prevent and reverse type 2 diabetes and help type 1 diabetics - in convincing detail, demonstrated by personal histories from his patients.

I was pleased to see that Dr. Fuhrman shows his readers how to apply the diet, with a week of sample diabetic diet menus and a short diabetic diet cookbook, with recipes to fit the menus.

I tested a few of his recipes, and they were delicious. It was a simple matter to omit or substitute one or two ingredients, and there was still plenty of flavor and nutrition from all the other ingredients.

These are low sodium recipes with no added fat, but so tasty and satisfying that those ingredients are not missed.

It seemed a bit odd to me that there were so few whole grains in the recipe (I do like a little quinoa with my veggies and beans), but this is a diabetic weight loss diet, and the recipes make perfect sense seen in that light.

A few minor quibbles about the menus and recipes:

Recipes are denoted in the sample menus with asterisks, but it would have been more helpful if page numbers were used, then it would be quicker and easier to locate the recipes.

Tofu Recipe Ebook

Some of the recipes would benefit from more detail in in the ingredients and directions because many people making these recipes will not be experienced cooks, at least not experienced at this kind of cooking.

For instance, in the Tofu Ranch Dressing/Dip, it would be helpful to know that firm or even extra firm silken tofu should be used in this recipe.

For the Pistachio-Crusted Tempeh recipe, I wanted to know exactly how thick to make the slices. 'Thinly' is open to interpretation.

Don't let my quibbles put you off. These recipes are life savers and we gobbled them up.

EVERYBODY should read The End of Diabetes, and learn how to prevent diabetes by eating a delicious nutritarian diet.
